Vegan Chocolate Chip Cookies
Soft sugan-laden vegan chocolate chip cookies

- 1 Cup Vegan Butter, solid not soft spreadable Room temperature
- 1 Cup Brown Sugar Loosely packed
- .5 Cup White Sugar
- 2 Tbsp Flaxseed Meal Mixed with 4 Tbsp water
- 2 Cups All purpose flour
- 1 tsp Baking Soda
- .5 tsp Salt
- 1½ Cup Vegan semi sweet chocolate chips
Preheat the oven to 350 degrees
Add the flaxseed meal to the water, let sit for at least 5 minutes
Cream the sugars and butter until smooth
Add the flaxseed 'egg' and mix thoroughly
Stir in flour, baking soda and salt (mix together prior to adding)
Mix in chocolate chips
Scoop out cookies (heaping tbsp), it should make around 4 dozen
Bake for 10 minutes with a single sheet in the oven at a time, cool on wire rack
