This chocolate banana bread has been a long standing favourite in our family, we've adjusted it to be plant based and it is just as good as the original- chocolately, moist and delicious.
1/2CupVegan hard margarineBecel plant based margarine works well
2Flax eggs2 tbsp flaxmeal, 6 tbsp hot water- left to sit
1CupMashed bananaApproximately 2 medium
1/4CupPlant based milk
1 1/2CupAll purpose flour
1/4CupCocoa
1 1/2tspBaking Powder
1/2tspBaking Soda
1/4tspsalt
1/2CupWalnuts, choppedoptional
1CupSugar
Instructions
Preheat oven to 350 degreesPrepare a loaf pan with non stick spray or parchment paperCombine vegan hard margarine, sugar and flax eggs in a medium bowl. Beat on medium to moisten. Add bananas and milk to batter and beat on low to blend.Add remaining ingredients (except nuts).Stir in walnuts.Pour into a medium loaf pan and at 60 minutes check to make sure it is fully baked, and return to the oven if it is not.Cool completely before removing from pan.
Notes
You can substitute the walnuts with semi-sweet chocolate chunks or chips.
