Mix dry ingredients and set aside.
I like Field Roast sausages for this dish. They have an amazing flavour, they stay mostly intact but crumble enough to really blend into the eggs.
Begin to brown sausages in a bit of oil while you get your tofu sorted.
Once the sausage is a bit browned, add your tofu by crumbling by hand and squishing any bit pieces with a spatula. Mix in the dry ingredients.
If it looks a bit dry add a splash of soy milk.
Mix and cook for a few moments on medium heat. Then add the grated cheese, sriracha and spinach.
Once the spinach is wilted and the cheese is melted- serve and enjoy!
