Seitan Chicken
I love experimenting with Seitan but I don’t make it often enough to remember what I did the previous time. Therefore this is a note to myself.
This recipe is from FitGreenMind. Who is amazing- few tweaks to our preference.
Seitan Chicken
Ingredients
- 1 Cup Chickpeas Homemade- or boiled a for 10 extra minutes to make them soft.
- ½ Cup Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Mustard
- 1 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Poultry Powder
- ⅔ Cup Chickpea Flour
- 1 Cup Wheat Gluten
Instructions
- Add to a food processor and mix for a few minutes until it comes together like dough.
- Remove and work until it rolls into a long log.
- Twist and tie in a knot
- Add to boiling water- with whatever spices (broth, marmite, poultry seasoning, garlic etc.)
- Simmer for 45 minutes.
- Shred once cooled
