Ginger (syrup, candy, cookies)
We had a lot of ginger to use up recently, so we embarked on a ginger journey.
Ginger Syrup
The first thing we made was a ginger syrup, from which you can make ginger beer or gingerale.
Wash/chop the ginger and stick it in the food processor and break it down until it is small chunks. place in a pot with water and sugar. Bring to boil and then let simmer until it reduced by half. Strain.. and you have an amazing ginger syrup.
- 2 Cups chopped ginger
- 2 Cups white sugar
- 6 Cups water
Simmer until it appears thick and glossy.. usually around 2 hours.
Mix a few spoonfuls with ice, sparkling water and a bit of lime juice.
Ginger Candy
Using the strained ginger pieces (which are sweet and sticky from the syrup), sprinkle with sugar and place on parchment. Dehydrate -I used the air-fryer dehydrate function- for about about an hour per batch.
Ginger Cookies
After making the syrup and the Ginger Candy, I had probably about 4 cups of candied ginger which is way more than we could even contend with. I found the most amazing ginger cookies which uses 1.5 Cups of candied ginger per batch. They are amazing.
I flip out the egg for an egg replacer (or flax egg).
