Vegan Baked Navy Beans
Made in the Instant Pot

Ingredients
- 450 G Dried Navy Beans
- 8 Cups Water
- 1 Onion Chopped small
- 2 Tbsp Brown or Dijon Mustard
- 2/3 Cups BBQ sauce
- 1/4 Apple Cider Vinegar to 1/3 cup
- 1/4 Cup Brown Sugar
- 1 tsp Liquid Smoke
- 1/2 Cup Ketchup
- 1/4 Cup Maple syrup
- 2 tsp Salt
- 1 cup Water
Notes
Add water, salt and rinsed navy beans to the Instant Pot. Pressure cook for 20 minutes, and naturally release for 15.
Strain and rinse the beans.
Add the onion to the Instant pot on sauté mode with a bit of water until cooked down.
Add the rest of the ingredients and stir well.
Put the lid back on and set the pressure for 0 minutes. Once it beeps that it has come to pressure turn it off and let it release naturally.
I have had the burn warning come on this last stage before if I tried to pressure cook for any length of time. If it comes on just turn off and let it release naturally.
The beans thicken as they cool.
