Coconut Rice

Coconut Rice

Coconut Rice is a must for a buddha bowl, it is rich and flavourful for such a simple dish.

Cook Time 20 minutes

Ingredients
  

  • 1 Tbsp Coconut Oil Unrefined
  • 2 tsp Ginger, minced
  • 1 Clove Garlic, minced
  • Cups Uncooked Rice
  • 3/4 Cup Coconut Milk
  • 1 tsp Maple Syrup
  • 1 tsp lemon zest
  • Cups Water
  • 1/2 tsp Salt

Instructions
 

  • Heat oil, garlic and ginger over medium and heat for 1 minute. Add rice and cook for another minute. Add remaining ingredients and bring to a boil.
    Cover and reduce to low-medium and simmer for 20 minute until rice is cooked.
    Fluff the rice and serve.
