Coconut Rice
Coconut Rice is a must for a buddha bowl, it is rich and flavourful for such a simple dish.
Ingredients
- 1 Tbsp Coconut Oil Unrefined
- 2 tsp Ginger, minced
- 1 Clove Garlic, minced
- 1½ Cups Uncooked Rice
- 3/4 Cup Coconut Milk
- 1 tsp Maple Syrup
- 1 tsp lemon zest
- 2¼ Cups Water
- 1/2 tsp Salt
Instructions
- Heat oil, garlic and ginger over medium and heat for 1 minute. Add rice and cook for another minute. Add remaining ingredients and bring to a boil.Cover and reduce to low-medium and simmer for 20 minute until rice is cooked.Fluff the rice and serve.
