Curried Lentil Soup
This soup is a staple in our house, it is super thick and flavourful. It is a perfect meal with just a nice slice of seedy bread. You can adjust the texture and thickness, depending if you are using it as a soup or a side dish.
Ingredients
- 1¼ Cups Red lentils
- 1/2 Cup White Rice
- 1 Tbsp Olive Oil
- 1 Medium Onion, chopped
- 2 Tbsp Curry Powder
- 5-6 Cups Veggie Broth
Instructions
- Measure the lentils and rice into a medium bowl and rinse several times- until the water runs clear. Leave to soak.Heat the oil in a sauce pan over medium heat and cook the onion until softened.Add curry powder and cook for 2 minutes while stirring.Pour in 5- 6 cups of broth and bring to a boil. Drain the lentils and rice and add to the sauce pan.Bring to a boil, then reduce heat, cover the pot and simmer for about 20 minutes. Stir occasionally and add more broth if the soup is looking too thick.Once the lentils and rice are tender, blend with a hand held immersion blender to your desired consistency. I usually blend about half of the soup, so it has quite a bit of texture.5 Cups of broth will be more like a dal than a soup.
