Corn and Bean Salad

This recipe is an a bright and flavourful way to get a lot of beans and veggies into a meal. Often we serve this as an add in to a buddha bowl or just as a side.

Ingredients
  

  • 1 15oz Can Black beans Drained and rinsed
  • 1 15oz Can Kidney beans Drained and rinsed
  • 1 Red Pepper, chopped
  • 1 Green Pepper, chopped
  • 2 Cups Corn Frozen (thawed) or Fresh
  • 1/4 Cup Red onion, chopped fine
  • 1/4 Cup Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 2 Tbsp Lime Juice
  • 1 Tbsp Lemon Juice
  • 2 Tbsp Sugar
  • 1 tsp Salt
  • 1 Clove Garlic, minced
  • 1/4 Cup Cilantro, chopped
  • 1 tsp Chili Powder
  • 1 Avocado, chopped

Instructions
 

  • Combine all ingredients, adjust seasoning (add a pinch of cumin or a bit of hot sauce) to taste and serve.
