Vegan Tofu Sesame Tortillas

This is one of our favourite meals. The marinate is sweet, the tofu is crunchy and the combination of veggies just makes this a perfect dinner that everyone enjoys.

Ingredients
  

  • 1 block Firm Tofu Cut into small cubes
  • 1/4 Cup Cornstarch
  • 1/3 Cup Maple Syrup
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sesame oil
  • 1 tsp Ginger minced
  • 2 Cloves Garlic minced
  • 1/2 Cup Grated Carrots
  • 3 Spring Onions Chopped Finely
  • 1 Cup Kale Massaged in a bit of olive oil
  • 1 Tbsp Sesame Seeds
  • 10 Small Tortillas
  • 1 Avocado Sliced

Instructions
 

  • Mix the tofu with cornstarch and a dash of salt and bake at 400 degrees for 20 minutes turning half way through. They will be very crunchy.
    While the tofu is baking, massage the kale and prep the other raw ingredients. Mix all together and sprinkle with the sesame seeds.
    To make the sauce mix the maple syrup, soy sauce, ginger, garlic and sesame oil, once the tofu is crunchy add to the sauce.
    To assemble the tortillas add tofu & sauce mixture, top with the veggie mixture, avocado slices and enjoy!

Notes

You will definitely have left over sauce, I like to keep it to marinate Tempeh or pour on rice at another meal.
