Tom Yum Soup
This soup is fantastic when you are feeling unwell. It is not authentic and adjusted to be vegan.
Tom Yum Soup
Ingredients
- 4 Cup Water
- 2 Stocks Lemongrass Crushed, cut into 2"
- 4 Kaffir Lime Leaves
- 1 Tbsp Soy Sauce
- 1 Shallot Sliced thin
- 1 Jalapeño Sliced thin
- 1 Tofu- firm Cubed
- 1 Lime Juiced
- 1/2 Bunch Cilantro Garnish
Notes
- Bring the water to a boil
- Cut and crush lemongrass lightly
- Add the lemongrass, shallot, lime leaves, jalapeño to the water and boil for a few minutes
- Add the soy sauce, tofu, lime juice. Bring the soup back to the boil then let simmer
- Garnish with some fresh cilantro
- Add salt or broth powder per taste
