Tom Yum Soup

This soup is fantastic when you are feeling unwell. It is not authentic and adjusted to be vegan.

Tom Yum Soup

Ingredients
  

  • 4 Cup Water
  • 2 Stocks Lemongrass Crushed, cut into 2"
  • 4 Kaffir Lime Leaves
  • 1 Tbsp Soy Sauce
  • 1 Shallot Sliced thin
  • 1 Jalapeño Sliced thin
  • 1 Tofu- firm Cubed
  • 1 Lime Juiced
  • 1/2 Bunch Cilantro Garnish

Notes

  • Bring the water to a boil
  • Cut and crush lemongrass lightly
  • Add the lemongrass, shallot, lime leaves, jalapeño to the water and boil for a few minutes
  • Add the soy sauce, tofu, lime juice. Bring the soup back to the boil then let simmer
  • Garnish with some fresh cilantro
  • Add salt or broth powder per taste
 
Additional additions: mushrooms, cherry tomatoes
