Holiday Beets
This has been our go-to holiday potluck dish for years. The original recipe is from the cookbook ‘The Clueless Vegetarian’ and was entitled ‘Sweet and Sour Roasted Beet Salad’ which I don’t actually think is a very accurate description of flavour.
- 1 lb beets- peeled and chopped
- 2 TBSP water
- 2 TBSP Balsamic Vinegar
- 1/8-1/4 Cup Olive Oil
- Finely chopped red onion or shallot
- 2 Garlic Crushed
- Salt and Pepper
Cover and bake for 1.5 hours at 350 degrees.
