Edamame and Quinoa Salad

This is one of my favourite recipes when lunch prepping for the week. It keeps very well and is extraordinarily filling. I typically double it. This is adjusted to our taste, the original recipe is from @_plantbaes_

Ingredients
  

Salad

  • 1/2 Cup Dry Quinoa Cooked with 1/2 tsp turmeric and 1/4 tsp pepper
  • 2 Cups Shredded Cabbage Coleslaw mix mixed with a few table spoons of lemon or lime juice and a bit of salt
  • 2 Cups Edamame Defrosted
  • 10 Mint Leaves Sliced thin
  • Walnut (handful) Crushed
  • 3 Spring Onions Sliced thin
  • Avocado Optional

Dressing

  • 4 Tbsp Peanut or Almond Butter
  • 1/2 Cup Lemon or Lime Juice
  • 2 Tbsp Soy Sauce or Tamari
  • 1 Tbsp Maple Syrup
  • 2 Tbsp Rice Vinegar
  • 2 Tbsp Fresh Ginger
