Sweet Lentil Salad
My friend Lotte brought this salad on a weekend trip. I've been making it ever since- it works well for meal prepping. I'm not sure the source of this recipe- I've adapted it (slightly) to our taste but I put the actual original recipe in the ingredient notes.
Ingredients
- 1 Can Lentils (398g) Drained and Rinsed
- ¼ Cup Red Onion Chopped Finely
- 6 Cups Fresh Spinach
- ⅓ Cup Capers
- ¼ Cup Pumpkin Seeds
- ½ Cup Dried Cranberries Increase to 1 Cup, if desired
Vinaigrette
- ¼ Cup Olive Oil Increase to ⅓ Cup, if desired
- ¼ Cup Apple Cider Vinegar
- 1 Tbsp Dijion
- 1 Tbsp Maple Syrup
- ½ tsp Cumin Increase to 1 tsp, if desired
- ¼ tsp Cayenne, Cinnamon, Nutmeg Each
- ½ tsp Turmeric
- Pinch Salt and Pepper
Instructions
- To serve immediately, shake or toss salad to combine.
- For a salad jar, mix vinaigrette with lentils, onions and capers and add first to the jar. Top with spinach, cranberries and pumpkin seeds. Shake jar to mix.
