Tahini/Peanut Butter Cookie
Ingredients
- ½ Cup Natural Peanut Butter Smooth
- ½ Cup Tahini
- 1 Cup Coconut Sugar
- ¼ Cup Soy Milk Add up to another 1/4 cup if necessary
- 2 tsp Vanilla
- ¼ Cup Millet Optional
- 1 Cup Flour
- 2 tsp Baking Soda
- 1 tsp Salt adjust if peanut butter is salted
Instructions
- Preheat oven to 350
- With a standing mixer, butter together the peanut butter, tahini and sugar.
- Add in milk and vanilla and beat until well mixed.
- Mix in the remainder of ingredients.
- Make 36 one-tablespoon balls (roll with your hands) and lightly flatten with a fork.
- Bake for 12-ish minutes and move to a cooling rack.
- Note: you'll have to add more milk if the tahini is on the thicker side. I tend to use the runnier tahini.
