Vegan Pad Thai

Before we went plant based, we would eat Pad Thai at least once a week. It is just a delicious mix of sweetness, crunch and flavour. I’m happy that we’ve found a fantastic vegan version, so we have this back in our meal rotation. The only adjustment I make from the recipe linked is that I bake the Tofu in the oven (or air-fryer) instead of frying it. I shake it with some cornstarch and bake it single layer and it only takes a few minutes and comes out super crunchy.
