Vegan Tomato, Pesto and Feta Sandwich

I’ve recently discovered Violife vegan Cheese it is fantastic! The feta version reminds me more of fresh Mozzarella truthfully and I love it on an open faced tomato, pesto sandwich.

Today’s lunch took all of 10 minutes to throw together, as the pesto is just the easiest thing to toss together and packs a huge punch in flavour.
