Vegan Chocolate Chip Cookies
This recipe is a veganized version of the chocolate chip cookies that we have made forever. They are soft, sugary and delicious.
Vegan Chocolate Chip Cookies
Soft sugan-laden vegan chocolate chip cookies
Ingredients
- 1 Cup Vegan Butter, solid not soft spreadable Room temperature
- 1 Cup Brown Sugar Loosely packed
- .5 Cup White Sugar
- 2 Tbsp Flaxseed Meal Mixed with 4 Tbsp water
- 2 Cups All purpose flour
- 1 tsp Baking Soda
- .5 tsp Salt
- 1½ Cup Vegan semi sweet chocolate chips
Instructions
- Preheat the oven to 350 degrees
- Add the flaxseed meal to the water, let sit for at least 5 minutes
- Cream the sugars and butter until smooth
- Add the flaxseed 'egg' and mix thoroughly
- Stir in flour, baking soda and salt (mix together prior to adding)
- Mix in chocolate chips
- Scoop out cookies (heaping tbsp), it should make around 4 dozen
- Bake for 10 minutes with a single sheet in the oven at a time, cool on wire rack
