Vegan Scrambled Eggs
My family are huge fans of tofu scrambled eggs. They usually eat this on toast with a side of vegan bacon and hashbrowns.
Scrambled Vegan Eggs
Ingredients
- 1 tsp Coconut oil Melt in the frying pan prior to cooking.
- 2 Vegan Sausages
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Turmeric
- 1/2 tsp Black Salt
- 4 Tbsp Nutritional Yeast
- 1/2 tsp Salt and Pepper (each)
- 300 Grams Medium Tofu
- 1 tsp Sriracha +/-
- 1 handful Spinach (or kale) Torn
- 1/2 Cup Shredded vegan cheese optional
Instructions
- Mix dry ingredients and set aside.
- I like Field Roast sausages for this dish. They have an amazing flavour, they stay mostly intact but crumble enough to really blend into the eggs.
- Begin to brown sausages in a bit of oil while you get your tofu sorted.
- Once the sausage is a bit browned, add your tofu by crumbling by hand and squishing any bit pieces with a spatula. Mix in the dry ingredients.
- If it looks a bit dry add a splash of soy milk.
- Mix and cook for a few moments on medium heat. Then add the grated cheese, sriracha and spinach.
- Once the spinach is wilted and the cheese is melted- serve and enjoy!
