Vegan Spinach Pesto
This vibrant fresh pesto can be used on pasta, in sandwiches or even as a dip. It is packed full of flavour and a healthy alternative to traditional pesto.
Equipment
- high powered blender
Ingredients
- 3 Handfuls Spinach
- 1/4 Cup Nutritional Yeast
- 2 Cloves Garlic
- 4 Tbsp Lemon juice or juice from one lemon
- 1/2 Cup Walnuts
- 1 Tbsp Miso paste
- 1 dash pepper
- 1/2 Cup Raw Cashews
- 3/4 Cup Water
Instructions
- Blend in food processor until lumpy in texture, you’ll have to stop and scrape the sides a few times. Do not allow it to blend completely.
- For the messiest appetizer in existence, but also, super delicious.. add a dollop of pesto on a fresh cut tomato and top with vegan mozzarella or feta.
Notes
Alternatively you can add in parsley or basil to the mix. The recipe is very forgiving, so you can add and adjust until you get the flavour profile that suits you.
If you plan on not eating it immediately, add a bit more lemon juice or a bit of parsley to help maintain the vibrant green colour.
