Vegan Mac ‘n Cheese

I think we have tried every vegan macaroni and cheese recipe out there or at the very least we have tried every method of re-creating traditional mac and cheese in the vegan world. We found the carrot or yam based ones too sweet so have opted to stick to the cashew based ones. The best on I have found so far is this one from Nora Cooks.

The sauce takes about 5 minutes to throw together and blend, so by the time the pasta is cooked, the meal is ready. We had this last night along with my favourite kale salad and The Very Good Butcher’s English banger sausage.
