Corn and Bean Salad
This recipe is an a bright and flavourful way to get a lot of beans and veggies into a meal. Often we serve this as an add in to a buddha bowl or just as a side.
Ingredients
- 1 15oz Can Black beans Drained and rinsed
- 1 15oz Can Kidney beans Drained and rinsed
- 1 Red Pepper, chopped
- 1 Green Pepper, chopped
- 2 Cups Corn Frozen (thawed) or Fresh
- 1/4 Cup Red onion, chopped fine
- 1/4 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- 2 Tbsp Lime Juice
- 1 Tbsp Lemon Juice
- 2 Tbsp Sugar
- 1 tsp Salt
- 1 Clove Garlic, minced
- 1/4 Cup Cilantro, chopped
- 1 tsp Chili Powder
- 1 Avocado, chopped
Instructions
- Combine all ingredients, adjust seasoning (add a pinch of cumin or a bit of hot sauce) to taste and serve.
