Maple Nutty Granola- Oil Free Option
Maple Nutty Granola
This (healthy-ish) granola is sweetened with maple syrup, it's made with oats, aquafaba (or coconut oil) and your favourite nuts and seeds.
Ingredients
- 4 Cups Old Fashioned Oats
- 1½ Cups Nuts/Seeds Any combo- cashews, pipits, hemp hearts, chia, sunflower etc.
- 1 tsp Salt
- 2 tsp Cinnamon
- ½ Cup Coconut Oil or Aquafaba Melted (coconut oil)
- ½ Cup Maple Syrup
Notes
Preheat ove to 350 degrees and prepare a cookie sheet with parchment paper. Mix all the ingredients well and spread evenly. Bake for 21-24 minutes- stirring half way, patting down firmly.
Remove from oven with the granola begins to darken.
To get chunky granola leave to cool undisturbed.
Note: if you’d like to add dried fruit, chocolate chips or coconut, you can mix it in after the granola has cooled.
Keep in an airtight container- I keep mine in mason jars.
I like to make mine with aquafaba instead of oil. You can hardly tell that it is oil free- especially when mixed with vegan yogurt or soy milk.
