Amazingly Quick Seed Loaf
We love this loaf, it comes together very quickly (without much kneading) and is full of seedy goodness. This bread works for toast, dipping in soup and even sandwiches.
Ingredients
- 400 Grams Bread Flour White or Whole Wheat
- 100 Grams Rye Flour
- 55 Grams Pumpkin Seeds
- 30 Grams Hemp Hearts
- 30 Grams Sunflower Seeds
- 15 Grams Chia Seeds Reserve some for sprinkling on top
- 30 Grams Sesame Seeds Reserve some for sprinkling on top
- 1 tsp Salt
- 1 tsp Yeast
- 1 Tbsp Sugar
- 2 Tbsp Canola Oil
- 350 Grams Luke Warm Water
- 2 Tbsp Maple Syrup optional
Instructions
- Mix all the dry ingredients in a bowl. Pour the water and oil and knead for about a minute- using a kitchenaid if possible
- Place the dough in an oiled loaf pan ( 8inch x 4 inch)
- Cover the dough with plastic wrap and let it rise for about 30-60 minutes
- Pre heat the oven to 350 degrees and bake for 40 minutes. Cool on rack.
Notes
You can mix up the seed quantity and even replace up to 75 Grams with chopped nuts. Just try to stick to around 170 Grams combined.
